Consider it like the height requirement for going on a roller coaster. It’s not that you can only be attracted to two genders to be bi, it’s that two is the minimum number of genders you should be attracted to. You can still ride a roller coaster if you’re taller than the specified height, and you can still identify as bi if you’re attracted to more than two genders.
(Also, being bi can be a wild ride, but that’s a different conversation entirely.)
